History:
Cooking raisins are one of the types of raisins widely used across Iran and are highly sought after. These raisins come in various colors and are produced and supplied through different methods. As the name suggests, they are commonly used in many dishes, especially rice-based dishes. These raisins evoke memories of school days and are often brought as souvenirs from religious cities like Mashhad and Qom. Raisins are Iran’s third-largest non-oil export product, ranking second in the export sector.

Storage Instructions:
Raisins should be stored in a cool, dry, and dark place. Avoid storing them in humid areas, as mold may grow. If you don’t have enough space in the refrigerator, you can use dark cabinets, but avoid placing them near the stove. If stored at room temperature, raisins can last up to six months. If stored in airtight containers in the refrigerator, their shelf life can be extended to one year.
Another issue is the possibility of insect infestation, so ensure there are no insect eggs or insects before storage. Long-term storage of raisins in open air or even in the refrigerator can cause them to harden. Therefore, it is recommended to store raisins in airtight containers. In the refrigerator, the sugar in raisins may crystallize over time, leading to hardened raisins.
Hardening or drying of raisins does not mean they are spoiled, but if you notice any changes in taste, smell, or color, it is better to discard them.
Usage:
In Iranian cuisine, cooking raisins are added raw to dishes like yogurt and cucumber or Abdoogh Khiar (a cold yogurt and cucumber soup). They are also delicious when fried and served with lentil rice. To maintain their moisture and freshness, store raisins in an airtight container in a cool place.
